Polvorones de Naranja

Ingredients
- Butter½ cup
- Sugar¼ cup
- Large Egg Yolks2
- Orange Juice¼ cup (60ml)
- Orange Peel, grated1 Large oranges
- All-Purpose Flour1 cups GF
- Powdered Sugar, for dustingas needed
Method
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Cream the fat and sugar. Beat the butter and sugar together until light and fluffy, about 3 minutes. Add the egg yolks one at a time, beating well after each addition.
- Add orange. Mix in the orange juice and grated orange peel.
- Add flour. Gradually stir in the flour until a soft dough forms. It should hold its shape but not be sticky.
- Shape the cookies. Roll the dough into small balls (about 1 inch) or use a small cookie cutter. Flatten slightly with a spoon and place on the prepared baking sheets.
- Bake. Bake for 12-13 minutes until just set and very lightly golden on the bottom. They should remain pale — don't let them brown.
- Dust. While still warm, roll or dust generously with powdered sugar. Let cool completely on a wire rack — the sugar coating sets as they cool.
