Peach Vinaigrette

Ingredients
- Peach Preserves¾ cup
- Rice Wine Vinegar1 cup
- Canola Oil1 cup
- Dijon Mustard1½ tbsp
- Salt¼ tbsp
- Black Pepper¼ tbsp
Method
- Blend. Add all ingredients to a food processor or blender and pulse until well mixed and emulsified.
- Taste. Adjust salt, pepper, or vinegar to taste.
- Store. Transfer to a jar or bottle. Keeps in the fridge for up to 2 weeks. Shake well before each use.
💡 Pairs beautifully with spring mix, gorgonzola, and toasted pecans. Also works as a light glaze for grilled chicken or pork.
