Peach Vinaigrette

Vegan Gluten Free Summer Quick

Ingredients

  • Peach Preserves¾ cup
  • Rice Wine Vinegar1 cup
  • Canola Oil1 cup
  • Dijon Mustard1½ tbsp
  • Salt¼ tbsp
  • Black Pepper¼ tbsp

Method

  1. Blend. Add all ingredients to a food processor or blender and pulse until well mixed and emulsified.
  2. Taste. Adjust salt, pepper, or vinegar to taste.
  3. Store. Transfer to a jar or bottle. Keeps in the fridge for up to 2 weeks. Shake well before each use.
💡 Pairs beautifully with spring mix, gorgonzola, and toasted pecans. Also works as a light glaze for grilled chicken or pork.
