Vegetarian Option Appetizer Anchovy Butter

Ingredients

  • Baguette1
  • Butter, melted3 tbsp
  • Goat Cheese, grated3 tbsp
  • Garlic Cloves3
  • Anchovies½ fillet
  • Saltpinch
  • Cayennedash
  • Paprikadouble dash

Method

  1. Make the butter. Using a mortar and pestle (or the flat of a knife), crush the garlic cloves and anchovy together with a pinch of salt until a smooth paste forms.
  2. Combine. Add the garlic-anchovy paste to the melted butter along with the cayenne, paprika, and grated goat cheese. Mix thoroughly until everything is incorporated.
  3. Spread and bake. Slice the baguette in half lengthwise. Spread the butter mixture generously over the cut sides. Bake at 350°F until golden and crispy on the edges.
💡 The anchovy disappears into the butter and just reads as deep savouriness — no fishy taste. The goat cheese adds a subtle tang that makes this more interesting than standard garlic bread. Don't skip the paprika.
