Fig & Goat Cheese Pizza

Ingredients
- Gluten-Free Pizza Dough (GF Bistro or Udi's)1 ball
- Fresh Figs, sliced4 figs
- Goat Cheese2 oz
- Blackberries¼ cup
- Pistachios½ cup
- Honey1 tbsp
Method
- Heat the grill to medium-high heat.
- Cook the dough. Cook the pizza dough on the grill according to the package directions until the crust is ready for toppings.
- Grill the figs. While the dough cooks, grill the sliced figs for about 2 minutes per side until softened and lightly charred.
- Assemble. Spread the goat cheese evenly over the pizza base. Top with blackberries, grilled figs, and pistachios.
- Finish. Drizzle with honey and serve immediately.
💡 This is a sweet, fruit-forward pizza — works as a light lunch or an unusual dessert. Swap figs for peaches in summer if figs aren't in season.
