Chai Tea

Ingredients
- Water4 cups
- Black Tea Bags4
- Cardamom Pods, gently crushed12
- Cinnamon Sticks4
- Fresh Ginger, sliced4-inch piece
- Whole Black Peppercorns8
- Whole Cloves8
- Star Anise2
- Vanilla Bean, split1
- Whole Allspice (optional)3
- Nutmeg⅛ tsp
- Brown Sugar2 tbsp
Method
- Combine spices and water. Add water, cardamom, cinnamon sticks, ginger, peppercorns, cloves, star anise, vanilla bean, allspice, and nutmeg to a medium saucepan. Bring to a boil over medium-high heat.
- Simmer. Reduce heat to medium-low and simmer for 10 minutes to allow the spices to infuse.
- Add tea. Remove from heat, add tea bags, and steep for 5 minutes. Don't over-steep or it turns bitter.
- Sweeten. Remove tea bags and stir in brown sugar to taste.
- Strain and serve. Strain through a fine mesh sieve into mugs. Serve as-is, or top with warm steamed milk.
💡 This makes a strong concentrate — dilute with milk (dairy or oat) 1:1 for a classic chai latte. Keeps in the fridge for up to a week; reheat as needed.
