Bircher Muesli

Ingredients
- Rolled Oats 1 cup
- Apple Juice ½ cup
- Yogurt ½ cup
- Mixed Berries handful
- Toasted Almonds 2 tbsp
Method
- Soak the oats. Combine oats and apple juice in a bowl or jar. Stir to coat, then cover and refrigerate overnight (or at least 4 hours). The oats will absorb the juice and soften.
- Mix in the yogurt. The next morning, stir the yogurt into the soaked oats. Add a splash more apple juice if you want a looser consistency.
- Top and serve. Spoon into bowls and top with berries and toasted almonds.
💡 Grate half an apple directly into the oats before soaking for a more traditional Swiss-style bircher.
