Bircher Muesli

Vegetarian Prep Ahead No Cook

Ingredients

  • Rolled Oats 1 cup
  • Apple Juice ½ cup
  • Yogurt ½ cup
  • Mixed Berries handful
  • Toasted Almonds 2 tbsp

Method

  1. Soak the oats. Combine oats and apple juice in a bowl or jar. Stir to coat, then cover and refrigerate overnight (or at least 4 hours). The oats will absorb the juice and soften.
  2. Mix in the yogurt. The next morning, stir the yogurt into the soaked oats. Add a splash more apple juice if you want a looser consistency.
  3. Top and serve. Spoon into bowls and top with berries and toasted almonds.
💡 Grate half an apple directly into the oats before soaking for a more traditional Swiss-style bircher.
