Apricot Mojito

Non-Alcoholic Apricot Mint

Ingredients

  • Fresh Mint Leaves4 leaves
  • Fresh Apricot, pitted and sliced1 ripe
  • Sugar1–2 tsp
  • Fresh Lemon Juice1 tbsp
  • Soda Watertop up
  • Ice

Method

  1. Muddle. In a glass or cocktail shaker, combine the mint leaves, apricot slices, Lemon and sugar. Muddle firmly until the mint is bruised and the apricot is mostly broken down — you want juice and aroma, not a paste.
  2. Add ice. fill the glass with ice.
  3. Top with tonic. Pour soda water over the top. Stir gently once to combine without losing the fizz.
  4. Garnish. Finish with a sprig of fresh mint and a slice of apricot on the rim.
💡 Fresh apricot is best in season — when unavailable, a tablespoon or two of apricot nectar or jam works well.
