Apricot Mojito

Ingredients
- Fresh Mint Leaves4 leaves
- Fresh Apricot, pitted and sliced1 ripe
- Sugar1–2 tsp
- Fresh Lemon Juice1 tbsp
- Soda Watertop up
- Ice—
Method
- Muddle. In a glass or cocktail shaker, combine the mint leaves, apricot slices, Lemon and sugar. Muddle firmly until the mint is bruised and the apricot is mostly broken down — you want juice and aroma, not a paste.
- Add ice. fill the glass with ice.
- Top with tonic. Pour soda water over the top. Stir gently once to combine without losing the fizz.
- Garnish. Finish with a sprig of fresh mint and a slice of apricot on the rim.
💡 Fresh apricot is best in season — when unavailable, a tablespoon or two of apricot nectar or jam works well.
