In-N-Out Animal-Style Fries

  • Mayonnaise½ cup
  • Ketchup3 tbsp
  • Sweet Pickle Relish2 tbsp
  • White Vinegar1 tsp
  • Yellow Mustard1 tsp
  • Kosher Salt, divided½ tsp
  • Unsalted Butter2 tbsp
  • Yellow Onion, finely chopped1 medium
  • Vegetable Oil, for frying~6 cups
  • Frozen Shoestring Fries16 oz
  • American Cheese, ½" pieces6 oz
  • Whole Milk⅓ cup

Method

  1. Make the animal sauce. Whisk mayonnaise, ketchup, relish, vinegar, mustard, and ¼ tsp salt together. Set aside.
  2. Caramelize the onion. In a large skillet over medium-high heat, melt butter. Add onion and ¼ tsp salt. Cook, stirring occasionally, until well browned, 8–10 minutes. Transfer to a small bowl.
  3. Heat the frying oil. Pour vegetable oil to a 2-inch depth in a Dutch oven or heavy pot. Heat over medium-high until a thermometer registers 375°F.
  4. Fry the fries. Using a spider or slotted spoon, lower half the fries into the oil. Fry, stirring to prevent sticking, until golden brown, 4–5 minutes. Transfer to a paper towel-lined baking sheet and season with salt. Repeat with remaining fries.
  5. Make the cheese sauce. In a small heatproof bowl, microwave the American cheese and milk in 30-second increments, whisking between each, until fully melted and smooth, 2–3 minutes total.
  6. Assemble. Pile fries on a platter or tray. Pour cheese sauce over top, then scatter caramelized onion. Drizzle generously with animal sauce.
💡 The animal sauce keeps in the fridge for up to a week and doubles as a great burger sauce.
